What exactly happens when a F/D Morphing Jar is attacked and one Night Assailant is discarded and there are no other flip monsters in the grave?

Because the flip effect resolves before the flip-effect monster goes to the graveyard, Morphing Jar will not be in the graveyard until after Night Assailant activates its effect.

Night Assailant activates his effect AFTER Morphing Jar resolves his effect and is sent to the Graveyard, which would be at the resolve effects portion of the Damage Step, where it is already determined that Morphing Jar is destroyed, and that would mean that Morphing Jar should be eligible for return to hand by Night Assailant's effect.

I could be wrong, but you shouldnt be able to resolve Night Assailant's effect inbetween the end of the Damage Step and Send to the Graveyard.

You would be right, except no.

The only points where a triggered effect can be pushed back, if I remember correctly, is during a chain and during Damage Calculation.
