is it possible to block the activation of the card you use with double spell, with something like spell sheild type eight, since it activates from the graveyard.

You can chain to the activation of Double Spell itself. But as you can see from the card registry this ruling about chaining to the selected card:

The selected card itself CANNOT be chained to as you are in resolution of the chain at that point.
