The second card ruling for this card states:

You can chain one of the 2 Spell or Trap Cards on the field to the activation of "Xing Zhen Hu". However, the remaining one will not be able to be activated after "Xing Zhen Hu" resolves.

Is it possible to chain my second spell or trap card to my first spell or trap card?

OK as a poor example, let's just say I have two Just Desserts face down on the field. My opponent plays Xing Zhen Hu and targets my two face down Just Desserts cards. I chain the first Just Desserts to Xing Zhen Hu. Can I chain my second Just Desserts to my first Just Desserts? If the answer is no, then I really need a detailed explanation as to why.
 
I'm pretty sure that what the ruling is saying is that if you activate one of the selected cards in response to "Xing Zhen Hu", you still will not be able to activate the second one after it resolves. You should be able to activate one of them in response to "Xing Zhen Hu", then the second one in reponse to the first one, as long as you give your opponent an opportunity to respond, and even if they do respond, you can just chain your second card to it if it's not a Counter Trap. Basically, yeah, you can activate them both, if I'm interpreting this ruling correctly.
 
Yes you are interpreting that correctly.

That statement was made to say that if you only activate one in the chain and then the chain resolves, you cannot activate the other one until "Xing Zhen Hu" is removed from the field.

Otherwise if the timing allows it, both cards could be activated in the chain with "Xing Zhen Hu" in which case they would both resolve first before "Xing Zhen Hu" would (which would then remain meaninglessly on the field).

I have two more questions question regarding this card.

1) If there is only one face down spell/trap cards in the field, can This card be activated to target the one card or does there have to be two cards in order for this card to be activated?

2) If my opponent has 1 face down spell/trap card and I have one, if I activate this card, do I have to target my card in addition to my opponent's card?

Sticking with how most things are ruled when a specific number is mentioned, then no it cannot be activated unless there are 2 cards (or more) on the field.

If your opponent has 1 and you have 1, then both must be selected, so yes.

Can Xin Zhen Hu target a face up continuous trap and stop it from activating in the future?

For example, could it be used against a face up solemn wishes?

A clarification of the term activation would be useful.
 
Xing Zhen Hu's effect is "Select 2 Set Spell or Trap Cards on the field and activate this card. As long as this card remains on the field, the selected Spell or Trap Cards cannot be activated."

XZH only targets set s/t cards; so, NO, you can not target a faced up spell or trap card.

Activating a spell or trap card is placing the card face up in the s/t zone. Using the effect of a continuous spell or trap card such as Skull Lair is not considered activating that card but activating its effect.
